1 cup all-purpose flour;
2 oz. soft goat cheese; 1/2 cup milk; 2 large eggs; 1 tbsp. sugar; 1 pinch salt; 3 tbsp. unsalted butter.
Blend the goat cheese, milk, flour, eggs, sugar and salt in a blender until smooth and set aside. Melt some butter in a cast iron skillet or a flat-top grill. Pour in the batter and cook the pancakes on both sides until they are puffy and brown. Top the pancakes with fruits or honey. This recipe makes 6 servings.
