Chicken Fajitas Recipe
2 boneless/skinless chicken breasts,
1 medium onion, sliced,
1 green pepper and 1 red bell pepper, sliced,
1 tbsp. vegetable oil,
fajita seasoning, as needed.
On the side:
8 (7-inch) flour tortillas,
1/2 cup diced tomato,
1/2 cup shredded cheese (cheddar and/or mozzarella mix),
chopped iceberg lettuce,
sour cream and guacamole (optional).
1. Grill and slice the chicken breasts to 1/3-inch strips.
2. Heat the oil to high temperature and saute the onion and pepper mix until soft. Add the chicken breast strips and season to taste with the fajita seasoning, approximately 1 teaspoon of it. Saute for about 2 minutes more. If the bottom of the skillet caramelizes, deglaze it with a little white wine to add some extra taste to the chicken fajitas.
3. In the meantime heat a cast iron platter until very hot and serve the chicken fajitas on it.
3. Drizzle some liquid, such as water or white wine, around the edges of the metal platter to make it sizzle and serve on an wooden board. Serve the chicken fajitas with warm tortillas on the side and a choice of condiments.
