3 tablespoons butter,
2 tablespoons extra virgin olive oil,
1 kg. peeled potato, sliced thinly,
1 large onion, chopped,
8 oz. diced smoked ham,
1/3 cup all-purpose flour,
6 cups chicken broth,
1 cup heavy cream,
1 tbsp. fresh chives, chopped,
salt and pepper to taste.


1. Heat the butter and olive oil in a large heavy saucepan and saute the onion and ham for about 4 minutes.

2. Add the sliced potatoes and flour and stir.

3. Saute until the potatoes start turning lightly golden and add the chicken broth.

4. Bring to a simmer and cook until the potatoes are very soft and crumble easily in the soup.

5. Add the cream and simmer for about 5 minutes more.

6. Season the soup to taste and serve.

7. Sprinkle some chopped chives over the potato soup.
