Chicken Breast with Blue Cheese-Almond sauce

Ingredients:
4 (7 oz. each) chicken breasts
"supreme" cut,
chicken seasoning, as needed,
1 tablespoon butter,
3 oz. blue cheese,
1 tablespoon sliced almonds, roasted,
1 teaspoon minced garlic,
1 tablespoon finely chopped onion,
1 oz. dry white wine,
1 cup cooking cream (35% cream),
salt and freshly ground black pepper to taste. |

Recipe:
1. Season the chicken breasts with the chicken seasoning and roast them until fully cooked.
2. Heat the butter in a large heavy skillet and saute the garlic and onion until lightly golden.
3. Add the crumbled blue cheese and sliced roasted almonds and cook for 2-3 minutes more.
4. Add the roasted chicken breasts and deglaze with the white wine.
5. Pour the cream in and reduce the sauce slightly.
6. Season to taste and serve the chicken breasts.
7. Pour the blue cheese almond sauce over the chicken breasts.
