Avocado Salad with Cashews



fresh spinach, as needed,
ripe avocados but still firm,
toasted cashews,
red peppers, julienned,
carrot, shedded to spaghetti,
toasted sesame seeds,
For the dressing:
macadamia nut oil, as needed,
fresh lemon juice to taste,
sea salt to taste,
1 teaspoon of sugar.


This is a recipe that does not require precise measures.

Just use as much ingredients as you like according to taste.

1. Place all the ingredients for the dressing in a small bottle and shake vigorously.

2. Peel and slice the avocado, toss it in a bowl with the other ingredients and some dressing, transfer in a salad bowl and drizzle a little bit of dressing on top of the salad.

3. Sprinkle with some black and white sesame seeds.

Tip: Creamy rich avocado is considered the world's healthiest fruit, because of its nutrient contents such as vitamin K, dietary fiber, potassium, folic acid, vitamin B6, vitamin C, copper, and reasonable calories in it.
