2 tbsp. butter (use clarified butter if possible); 1 small onion, chopped finely; 2 tbsp. all-purpose flour; 1 cup whole milk; 1 lb. cooked crab meat; 1 lb. cooked shrimp (size 31-35); 1 tbsp. chopped fresh parsley; 1 cup shredded cheddar cheese; 1/2 cup panko breadcrumbs; salt and pepper to taste.
Recipe: In a large skillet, heat the butter and saute onion until very soft and lightly golden, about 3-4 minutes. Add flour and cook 2 minutes more. Stir in milk while whisking, and cook until sauce thickens. Stir in crabmeat, shrimp, parsley, and 1/2 cup of the shredded cheddar cheese. Toss until cheese starts melting. Pour the mixture into buttered casserole dish. Sprinkle with remaining cheese then with the bread crumbs on top. Bake at 400 degrees F for about 15-20 minutes or until hot and bubbly.
