Thai Cucumber Salad Ajar

Ingredients:

1 large cucumber or several small ones, diced;
(Fresh small cucumbers work better for the ajar recipe,
because they are a little bit drier and more crunchy),
1/2 tbsp. sugar;
1 tsp. salt;
2 shallots, chopped;
1 fresh red chili, chopped;
1 small carrot, shredded;
1 tbsp. fresh cilantro, chopped;
2 tbsp. rice vinegar,
black pepper to taste.

Recipe:

Remove seeds from cucumbers and dice them. Mix all the ingredients together in a non-metal bowl, and toss well. Cover the salad and refrigerate for about 30 minutes before serving, in order to marinate the cucumbers and blend flavors.
