Irish Boxty Recipe - Crispy Potato Pancake


1 large raw potato,
1 cup mashed potatoes,
1 cup all-purpose flour,
1 tsp. baking powder,
1 tsp. salt,
1 large egg,
1/2 cup 10% cream,
2 Tbsp. butter.


Peel and grate the potato, then squeeze it gently to remove the extra moisture. Whisk together all the ingredients, except the butter, in a bowl until you have batter slightly thicker than pancake mix. Grease a flat top griddle or a skillet with the butter and ladle some boxty batter on it. Spread the batter to 5-inches in diameter. Cook each boxty on both sides until golden brown and crispy outside.
