Ingredients:
3-4 whole beets, (I used candycane beets),
1 iceberg lettuce,
1 cup grape tomatoes,
1 seedless cucumber,
greeen onion, sliced,
purple onion, chopped,
fresh parsley, chopped,
your favorite dressing
Recipe:
- Peel, dice and boil the beets.
- Strain the beets and let them cool down.
- Cut the rest of the vegetables and mix them with the beets and the dressing.
