WATERMELON SALAD RECIPE

Watermelon salad with goat cheese
 

Ingredients for 2 salads:

1 ripe seedless watermelon,
4 oz. goat cheese,
2 oz. roasted pumpkin seeds,
little spring mix greens,
honey-balsamic reduction
for decorating the plates.

Recipe: Cut 10 strips of watermelon for each salad, 1/3-inch thick and 3-inches long. Place a pinch of the spring mix in the center of each plate and arrange the watermelon in the manner seen in the picture. Crumble the goat cheese over the watermelon and sprinkle with the roasted pumpkin seeds. Decorate with the sweet balsamic reduction and serve cold. You can make the balsamic reduction by placing 3 ounces of balsamic vinegar and 1 teaspoon of honey in a pan and reduce it over the stove. Tip: Cool down the plates in the refrigerator before serving to help keep the salad cold while on the table. This watermelon salad recipe is very simple to make, but I can assure you that it tastes great.
