Salad with moscatel wine vinegar dressing

Tossed Salad with Moscatel Dressing

 

Ingredients for 4 salads:

2 romaine hearts,
1 small red onion,
1 large ripe tomato,
1 bell pepper, sliced,
1/2 cup shredded zucchini,
1/4 cup raisins,
1 banana pepper, mild or medium-hot,
2 oz. moscatel wine vinegar,
2 oz. extra virgin olive oil,
sea salt and freshly ground black pepper to taste.

Recipe:

Moscatel is an exceptionally fruity, yet delicate golden vinegar made from fine moscatel wine and matured in the traditional Spanish solera system.

It is probably not easy to find moscatel vinegar in North America, but it's worth searching and obtaining it.

1. Wash and prep all the ingredients in advance.

2. Place all the vegetables in a bowl.

3. Add the moscatel vinegar and the olive oil just before serving, season to taste, toss well and serve.

4. Top the salads with the raisins.

This salad doesn't need any additional herbs or spices.

It is delicious as it is, however, you can add an additional flavor by adding a splash of truffle-flavored oil to it.
