Ingredients:
3 tablespoon butter,
2 tablespoon olive oil,
1 kg. peeled potato, sliced thinly,
1 large onion, chopped,
8 oz. diced smoked ham,
1/3 cup all-purpose flour,
6 cups chicken broth,
1 cup heavy cream,
fresh chives, chopped,
salt and pepper to taste.
Recipe:Heat the butter and olive oil in a large heavy saucepan and saute the onion and ham for about 4 minutes. Add the sliced potatoes and flour and stir. Saute until the potatoes start turning lightly golden and add the chicken broth. Bring to a simmer and cook until the potatoes are very soft and crumble easily in the soup. Add the cream and simmer for about 5 minutes more. Season the soup to taste and serve. Sprinkle some chopped chives over the potato soup.
