Thai Glazed Salmon Recipe

Ingredients:

4 (6 oz.) salmon fillets,
1/2 cup Thai dressing,
1/4 cup chicken stock,
2 Tbsp. shredded carrot,
1 Tbsp. finely chopped red bell pepper,
1 Tbsp. sesame seeds,
1 tsp. chopped cilantro,
1 lemon wedge,
salt and pepper to taste.

Recipe:

Top the salmon fillets with the shredded carrot, red pepper, cilantro and sesame seeds. Pour the chicken stock in a small roasting pan, add the lemon wedge and put the salmon fillets in the pan. Season lightly with salt and pepper. Pour the Thai dressing over the salmon and bake in a preheated oven at 400 F until ready, usually about 10 minutes. Baste the salmon fillets with the glaze from time to time. Add some more dressing if necessary. Serve the salmon fillets with potato and vegetables and drizzle with the remaining glaze. Tip: The shiny glaze over the salmon fillets is the result of the sugar in the dressing. If you are using store-bought Thai dressing, add some corn syrup and fresh ginger to it.
