Pork Stew With Garbanzo Beans

Ingredients:

1 lb. diced pork loin,
1 can (14 oz.) garbanzo beans,
1 onion, chopped,
1 tsp. grated fresh ginger,
1/4 tsp. ground cumin,
1/4 tsp. allspice,
4 garlic cloves, crushed,
1 sweet potato,
peeled and diced,
2 cups chicken stock,
1 lb. diced roma tomatoes from a can,
4 Tbsp. olive oil,
salt and pepper to taste.

Recipe:

Heat the oil in a large skillet and saute the garlic and onion for 3 minutes. Add the diced pork loin and ginger and saute until the pork is seared. Deglaze with the chicken stock and add the diced tomatoes, garbanzo beans, sweet potato and spices. Cover the skillet with a lid and simmer for 25 minutes or until the sweet potato is very soft and the stew has the right consistency.

Garbanzo been (or chickpea) is one of the legumes with the highest amount of protein. For that reason the garbanzo beans are very popular with all vegetarians. Garbanzo beans are considered Mediterranean food product, but are popular in many other cuisines such as India for example, where it's often ground and made to flour.
