Greek Salad Recipe

Ingredients:

3-4 ripe tomatoes cut to wedges,
1/2 cucumber, sliced,
1 fire-roasted bell pepper, sliced,
1 oz. red onion sliced to rings,
1/2 cup feta cheese, crumbled or diced to small cubes,
1 handful calamata olives,
Greek salad dressing,
chopped fresh parsley.

Recipe:

Put all the ingredients except the feta cheese in a bowl and pour the Greek salad dressing on top. Mix thoroughly and taste the salad to adjust the seasoning if needed. Transfer the salad in a large salad bowl and top it with the feta cheese. Sprinkle with the chopped parsley on top.

The Greek salad is called horiatiki in Greece and is sometimes mixed with iceberg lettuce and fresh baby spinach as well. The greek salad is an excellent side dish, but because it has good nutritional value it can be served as a main dish as well.
