Kahlsuppe - German Cabbage Soup Recipe

Ingredients:

1 head cabbage, shredded,
5 slices smoked bacon, diced,
1 large white onion, sliced,
2 carrots, diced,
1 leek, thinly sliced,
2 potatoes, peeled and diced,
8 cups chicken stock,
1 Tbsp. butter,
1 bouquet garni (rosemary, bay leaf, thyme and parsley tied together),
salt and pepper to taste.

Recipe:

In a large saucepan, heat the butter and saute the onions, diced bacon and leek. Combine all the remaining ingredients except salt and pepper in the saucepan. Bring to a boil and then simmer partially covered for 90 minutes. Remove the bouquet garni and season the soup with salt and pepper. Serve the cabbage soup and garnish with fresh parsley leaves. Tip: This cabbage soup recipe is very suitable for diet food, if you skip the bacon in the recipe.
