BROILED ORANGE ROUGHY FILLET

 

Ingredients:

4 orange roughy fillets,
8 tablespoons Mediterranean salsa (store bought, or use this recipe),
1/2 cup flour,
2 ounces cooking cream,
1 small pinch nutmeg,
1 teaspoon Cajun seasoning,
1/4 cup vegetable oil,
salt and pepper to taste,
1 tablespoon lemon juice.

Recipe:

1. Put the flour in a plate and dredge the orange roughy fillets.

2. Heat the oil in a frying pan and cook the orange roughy fillets until crispy outside and half-cooked inside.

3. Mix the Mediterranean salsa with the nutmeg, cooking cream, Cajun seasoning and lemon juice.

4. Place the orange roughy fillets in a baking dish and spoon the Mediterranean salsa glaze over them.

5. Bake in a preheated oven at 450 F until ready, about 15 minutes, depending on the size of the orange roughy fillet.

6. For the last 4-5 minutes of cooking, turn your oven only to broiling (heat from only the top element).
