Calzone - Baked Panzerotti

The Calzone is a closed Italian pizza also called Baked Panzerotti pizza . When I was in Carnival Cruise Lines, some customers thought that this is a small bread and called it "panecillo" in Spanish.

For the pizza dough recipe go to Pizza with goat cheese and mushroom ragout.

For the Calzone stuffing: sauteed zucchini, onion, red pepper and mushtooms, pepperoni, italian sausage, little mozzarella and very little tomato sauce. For the egg wash: egg and milk.

Roll the pizza dough and put the stuffing on one side of the pizza. Fold the other half over the stuffing and make sure you close the end properly. Help yourself with a fork, if needed. Brush the calzone with egg wash and bake in a preheated oven until golden brown. Most calzone I have seen don't have tomato sauce in the stuffing. However, if you make sure your vegetables are not too moist, you can put a spoon or two of tomato sauce inside the calzone.
